Ingredients
4Tbsp.butter
4Tbsp.flour
2c.cream or milk, scalded
1c.sharp Cheddar cheese, grated
Salt and white pepper to taste
1tsp.angostura bitters
Pinchnutmeg
1-2baked potatoes, cubed, diced or sliced
Parmesan cheese, grated
Paprika
Instructions
Melt butter. Gradually add flour. Stir constantly over a low heat for 3-4 minutes.
Gradually add cream or milk, stirring constantly until well blended. Add Cheddar cheese and stir over low heat until the cheese is thoroughly blended. Season with salt, pepper, bitters and nutmeg.
Put the potatoes into a casserole and cheese sauce, Parmesan cheese, and paprika.
Bake at 400° just until boiling hot and a slight crust forms on top.
