Chicken Salad
Kozlak's Royal Oak Restaurant in Shoreview, Minnesota.
Ingredients
- 1 cup raw wild rice
- 3 cups chicken bouillon
- 2 cups chicken, diced
- 1 cup celery, diced
- 2 tablespoons green pepper, chopped
- 1 tablespoon sweet red pepper, chopped
- 1 teaspoon green onion, chopped
- ½ cup toasted almonds, sliced
- 1 cup mayonnaise
- salt and pepper to taste
Instructions
- In a medium saucepan, cook wild rice in chicken bouillon. Drain, rinse, and cool.
- In a large mixing bowl, gently mix the cooked wild rice, chicken, celery, green pepper, red pepper, green onion, almonds, and mayonnaise. Season with salt and pepper to taste. Serve cold.
