Ingredients
1medium head red cabbage
1medium sweet onion, sliced
2large apples, peeled and quartered
1Tbsp.plus 1 tsp. bacon fat
1tsp.salt
½cupsugar
1½cupswater
1cupvinegar
1bay leaf
2whole allspice
2cloves, heads removed
6peppercorns
cornstarch
Instructions
Wash and remove outer leaves of cabbage. Remove core and slice. In a large saucepan, combine cabbage, onion, apples and bacon fat, then add salt, sugar, water, vinegar, bay leaf, allspice, cloves and peppercorns. Simmer 1½ hours covered.
Thicken slightly with a small amount of cornstarch. Before serving, remove bay leaf, allspice, cloves and peppercorns.
