Apple’s Restaurant opened in 1990 along Town Centre Drive in Eagan, Minnesota. Patricia “Pat” Boland owned and operated the restaurant after the death of her husband, Jack. Pat is remembered as an accomplished chef and entrepreneur.
Pat met John “Jack” Boland and were married in 1957. The couple settled in Lakeville and raised their family there. The couple owned and operated two furniture stores before opening Apple’s Restaurant first in Durham, North Carolina. Then, after Jack’s death, Pat opened the Restaurant in Eagan.
Apples was known not just for its delicious food, but also for the sense of community it fostered. Its homey decor and a menu of tasty soups, salads, sandwiches, and sweet treats made it a favorite spot for locals to meet up with friends for a quick lunch or a casual dinner out, creating a sense of belonging that extended beyond the dining table.
The restaurant closed in 1998, leaving a void in the community. Pat pursued a career outside the restaurant industry. She passed away in 2016.
