Chilled Strawberry Champagne Soup

Served in the dining room at the Saint Paul Hotel in Saint Paul, Minnesota.

Ingredients

  • 1 pint strawberries, rinsed and topped
  • 1 cup fresh orange juice
  • 1 tablespoon lemon juice
  • 2 tablespoons honey
  • 1 tablespoon sugar
  • 6 ounces champagne
  • 2 ounces raspberry liqueur (optional)
  • ½ cup sour cream
  • Whipped or sour cream for topping
  • Mint leaves for garnish

Instructions

  • With a food processor or blender, combine strawberries, orange juice, lemon juice, honey, sugar, champagne, raspberry liqueur and sour cream; puree until the mixture is smooth. Chill well.
  • Serve in chilled soup cups. Garnish with fresh whipped cream or sour cream and a mint leaf.
