Granola Muffins

These muffins were a crowd favorite in the Tea Room at the Minnesota Landscape Arboretum in the 1970s.

Ingredients

c.
butter
½
c.
brown sugar
1
egg
1
c.
sour milk
1
cup
flour
1¼
tsp.
baking powder
½
tsp.
salt
⅓
tsp.
baking soda
1
c.
granola
Instructions
Combine flour, baking powder, salt and soda.
Cream together the butter and brown sugar. Add the egg and mix well.
Add sour milk alternately with the dry ingredients to egg-butter mixture. Stir in the granola.
Line muffin pan with paper cups. Fill each cup ¾ full.
Bake at 400° for 15 to 20 minutes. Cool on rack.
Notes
Add 1½ tsp. vinegar to 1 cup milk to sour it
