Granola Muffins

These muffins were a crowd favorite in the Tea Room at the Minnesota Landscape Arboretum in the 1970s.

Ingredients

  • ½ c. butter
  • ½ c. brown sugar
  • 1 egg
  • 1 c. sour milk
  • 1 cup flour
  • 1¼ tsp. baking powder
  • ½ tsp. salt
  • ⅓ tsp. baking soda
  • 1 c. granola

Instructions

  • Combine flour, baking powder, salt and soda.
  • Cream together the butter and brown sugar. Add the egg and mix well.
  • Add sour milk alternately with the dry ingredients to egg-butter mixture. Stir in the granola.
  • Line muffin pan with paper cups. Fill each cup ¾ full.
  • Bake at 400° for 15 to 20 minutes. Cool on rack.
Notes
Add 1½ tsp. vinegar to 1 cup milk to sour it
