Potato Skins
Served at Grandma's restaurants in Duluth and Minneapolis.

Ingredients
3
potatoes, baked
2
ounces
cheddar cheese
2
ounces
swiss cheese
3
slices
bacon, fried
3
ounces
sour cream
green onions for garnish, sliced or chopped
fat for deep frying
Instructions

Cut baked potatoes in half lengthwise and take out the flesh, leaving about an inch with the skin. Be careful not to cut through the skins.
▢
Fry skins in a deep fat fryer until golden brown.
▢
Cover half of the skins with cheddar cheese and half with swiss cheese. Sprinkle crumbled, fried bacon on each skin.
▢
Bake at 350° until cheese melts.
▢
Garnish with sour cream and green onions.
