
Double Dutch Pizza Cookie
This indulgent pizza cookie was created by the Classic Cookie Co. for their cookie counter in the Minneapolis, Minnesota, skyway in the 1980s.

Ingredients
- ¾ c. butter
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1½ c. flour
- ¼ c. cocoa
- ½ tsp. baking soda
- ¼ tsp. salt
- ¾ c. plain M&Ms
- ⅔ c. nuts, chopped
- ¾ to 1 c. miniature marshmallows
- ¼ c. flaked coconut
Instructions
- Preheat oven to 350°. Lightly grease a 12- or 13-inch round pizza pan, then line with kitchen parchment paper.
- In a medium bowl, combine flour, cocoa, baking soda, and salt. Set aside.
- Using an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Slowly add dry ingredients to creamed mixture, mixing very well. Fold in ½ cup of the M&Ms and ⅓ cup of the nuts.
- Spread dough onto prepared pan to within ½ inch from the edge. Sprinkle with remaining candy and nuts, then add marshmallows evenly over dough.
- Bake for 18 to 20 minutes or until edges are set. Do not over bake. Sprinkle coconut over top.
- Cool 10 minutes on pan. Gently remove cookie with liner to wire rack to cool thoroughly.
- Cut into wedges to serve.
