Double Dutch Pizza Cookie

This indulgent pizza cookie was created by the Classic Cookie Co. for their cookie counter in the Minneapolis, Minnesota, skyway in the 1980s.

Ingredients

  • ¾ c. butter
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • c. flour
  • ¼ c. cocoa
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¾ c. plain M&Ms
  • c. nuts, chopped
  • ¾ to 1 c. miniature marshmallows
  • ¼ c. flaked coconut

Instructions

  • Preheat oven to 350°. Lightly grease a 12- or 13-inch round pizza pan, then line with kitchen parchment paper.
  • In a medium bowl, combine flour, cocoa, baking soda, and salt. Set aside.
  • Using an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Slowly add dry ingredients to creamed mixture, mixing very well. Fold in ½ cup of the M&Ms and ⅓ cup of the nuts.
  • Spread dough onto prepared pan to within ½ inch from the edge. Sprinkle with remaining candy and nuts, then add marshmallows evenly over dough.
  • Bake for 18 to 20 minutes or until edges are set. Do not over bake. Sprinkle coconut over top.
  • Cool 10 minutes on pan. Gently remove cookie with liner to wire rack to cool thoroughly.
  • Cut into wedges to serve.
