Apricot Oatmeal Bars
These delicious bars were served at Cafe Metro in Minneapolis in the 1990s.
Servings: 12
Ingredients
- 3 cups dried apricots, chopped
- 1 Tbsp. flour
- ½ cup brown sugar
- 1 cup water
- 1 tsp. vanilla
- 1 Tbsp. rum (optional)
Crust
- 2 cups flour
- 1½ cups brown sugar
- 1½ tsp. baking soda
- 1 cup butter, melted
- 3½ cups oatmeal
Instructions
- Preheat oven to 375°.
- Combine the apricots, brown sugar, flour, and water I na saucepan. Cook just until the apricots have softened and the mixture is thickened. Add the vanilla and rum. Set aside.
- For the crust, combine the flour, brown sugar, and baking soda in a medium bowl. Toss with the melted butter by hand until well combined. Blend in the oatmeal. Press half of the mixture into the bottom of a 9×12-inch baking dish. If time permits, refrigerate the pressed-out dough for 30 minutes. This will make the next step easier.
- Carefully spread the apricot mixture evenly over the crust. Sprinkle remaining mixture over the apricots.
- Bake for 20-25 minutes or until golden brown. Cool completely before serving.
