Chicken and Strawberry Salad
Ingredients
- 7 strawberries
- ¾ c. mixed greens
- 2 Tbsp. melted oil/butter blend (1 Tbsp. of each, blended together)
- 4 oz. chicken breast strips, uncooked
- 1/4 c. Honey-Soy Dressing
- 2 Tbsp. large walnuts, chopped
- Sprig of parsley for garnish
Honey-Soy Dressing
- ½ c. red wine vinegar
- ½ c. honey
- 2 Tbsp. soy sauce
- 2 tsp. garlic, chopped
- 2 tsp. fresh ginger, chopped
- ¼ tsp. black pepper
Instructions
- Hull 6 strawberries, then cut in half; leave one strawberry whole.
- Place greens in a bowl.
- Blend all ingredients together for dressing.
- In a sauté pan, add oil-butter blend; heat. Add chicken strips; sauté until brown on all sides. Add ¼ cup dressing; simmer 1 minute. Add all the strawberries except the whole one; heat only slightly.
- Pour chicken and strawberries over mixed greens. Sprinkle walnuts around the inside of bowl. Garnish with the whole strawberry and a parsley sprig.

Dayton’s flagship department store opened on Nicollet Avenue in Minneapolis in 1902. Goodfellow’s department store originally occupied the space, but in 1903 George Draper Dayton bought it and renamed the store Dayton’s. When it was time to expand across the river, Dayton’s purchased one of Saint Paul’s oldest department stores, Schuneman’s, in 1959. Dayton’s took over management of Schuneman’s popular dining room, the River Room.
Dayton’s chose to abandon the former home of Schuneman’s that dated back to the 1890s. A contemporary building designed by Austrian architect Victor Gruen was built across Wabasha Street from the old Schuneman’s. The mammoth building occupied an entire city block bounded by Cedar, Wabasha, 6th, and 7th streets. To make room for the new store, twelve low-rise buildings constructed in the decades on either side of the turn of the 20th century. The Schuneman’s building was also razed after Dayton’s moved into the new five-story store in 1963.
The Dayton’s store in Saint Paul, along with the beloved River Room, closed on February 1, 2013.
